Learn about Louisiana Seafood Availability & Best Handling Practices. We will focus on several underutilized heritage freshwater fish species such as Garfish, Buffalo Fish, Gasper Goo, Big Blue and Flat Head Catfish; featuring smoking, mince, and grinding production methods to create new value-added product forms and reimagined dishes. A variety of equipment will be demonstrated with lunch and product tasting provided.
